This is how I make tofu for my son. He absolutely loves it, which is fairly unusual as he doesn't really like anything that's remotely healthy. This is remotely healthy.
Cut tofu into slices of approx. 1/2 cm. Put into a shallow dish and pour shoyu (Japanese soy sauce) over it to lightly cover. Grate a small amount of fresh ginger and add to the marinade. Let it sit for a while, then heat up oil and fry tofu on both sides until it is brown (this takes about 5 mins). Let it rest briefly on a paper towel to soak up excess oil and serve.

Here is how Ella and Felix eat it:
1. Open package of plain white tofu, drain and pat dry
2. Cut into desired shape:
Ella - centimeter-wide matchsticks
Felix - cubes or whatever, he doesn't really care
3. Serve and eat - cold and raw
euwwwww! no better way of doing this?
I always cook tofu stir fry in a basic Chinese sauce, sauteed garlic, ginger, onion, then topped with a combination of equal parts soy sauce, rice vinegar and sweet rice wine or sake. You can make it saltier/tangier/sweeter by adding more of one thing.
After I get the sauce going, I toss in tofu that's been dried and cook for a few minutes.
The kids like the squishy texture, and don't go so much for tofu that's been browned.
well, that certainly sounds a lot better than nicki's version! will try it. i do think the simplicity of the original recipe i posted is hard to top, though.
